Snacktastic Saturday: Cucumber Salad

One of my favorite fresh from the garden vegetables to eat every summer is cucumbers. I put them on just about every salad I eat, plain in a bowl, & as my favorite cucumber salad.


How To:

•sour cream
•white vinegar
•sugar
•mustard seed
•black pepper
•cucumbers, peeled & sliced
•onion, diced

•In a medium sized bowl, mix together desired amounts of sour cream, vinegar & sugar with a whisk. (I generally use a couple spoonfuls of sour cream, a splash of vinegar & about a tsp. of sugar.) Taste & adjust accordingly.
•Add desired amount of cucumbers, onions, mustard seed & black pepper. Stir to mix.
•Allow to sit in refrigerator at least 30 minutes to let flavors blend (best is a couple of hours). 
 * The water from the cucumbers will eventually make the dressing very runny. Don't worry, it's still delicious!

  1. I'm going to have to try this one day...now all I need is a few cucumbers and mustard seed.
