Tasty Tuesday: Sweet Potato Casserole

Just because Thanksgiving is over, doesn't mean you can't indulge in a little bit of sweet potatoes. Topped with marshmallows of course.

Look at all the ooey gooey marshmallow!

•sweet potatoes, peeled & diced
•water
•salt
•milk or heavy cream 
•butter or margarine
•nutmeg
•cinnamon
•brown sugar
•black pepper
•cayenne pepper
•butter or margarine
•marshmallows 

*Use desired amounts

 - Place sweet potatoes in a large pot & cover with water. 
- Generously add salt & bring to a boil until easily pierced with a fork.
- Drain potatoes & return to pot.
- Add milk & margarine or butter (just as you would for regular mashed potatoes). Followed by nutmeg, cinnamon, brown sugar, black pepper & cayenne pepper.
- Mix thoroughly.
- Place in greased casserole dish & top with marshmallows.
- Bake at 400 degrees until marshmallows are melted. (I turned on the broiler for a couple minutes to get them nice & toasty.)
