OK, so this isn't a salad swap recipe. But, it is my current salad du jour. Fancy Greens, Spinach & Arugula, with cucumbers, tomatoes, red onion, celery & a light vinaigrette. Of course the salad swap recipe for a Reuben is practically screaming my name!

  1. I love salads so switching from some of the higher calorie meals is not a problem. But there would be certain foods I would miss. I love the idea of trying to combine them

  3. I have GOT to take this challenge. My yearly physical was on Friday and my doc eas NOT happy with my A1C. (Blood glucose) I never buy bags salads because I didn't think they were very fresh. These look amazing!
