Tasty Tuesday: Cuban Black Bean Soup

We had our first snow where I live in NE Ohio! So with winter officially around the corner, there's nothing more comforting than a big bowl of soup! This has to be one of my favorite soups, so even though I know I should wait for the ham to go on sale for the holidays, I just can't. (Good thing just one half ham will give me three different dinners.)


•bone from bone-in ham (I don't bother trying to get the bone only since I need some meat too.)
•ham, torn into pieces
•1 can diced green chilies
•1-2 cans black beans, rinsed & drained
•1 medium onion, chopped
•1-2 decent sized sweet potatoes, peeled & diced into bite-sized pieces
•2-3Tbsp. ground cumin (or more depending on your taste & amount of ingredients.)
•1-2 beef bouillon cubes
•dash of cayenne pepper
•salt & pepper to taste
•sour cream, diced green onion & chopped fresh parsley for garnish

- In a large pot, place your ham bone & fill with desired amount of water. Bring to a boil, followed by a simmer for 1-2 hours.
- Remove from heat & drain into a large bowl. Discard bone & fat.
- Return broth to the pot & the pot to the stove over medium heat. Add remaining ingredients except those meant for garnish.
- Simmer 20-30 minutes or until sweet potatoes are cooked through.
- Serve topped with suggested garnish & enjoy!
