There's no monkeying around when it comes to this breakfast treat. Although, there's no bananas or monkeys, so I'm not too sure how it got it's name. But whatever the reason, it's delicious.

•2-3 cans buttermilk biscuits (It depends on how many apples you plan on using. You can also make your biscuit dough if you prefer. I made Baking Powder Biscuit Dough.)
•cinnamon & sugar mixture (Use desired amounts of each.)
•apples, chopped
•nonstick cooking spray
•2 sticks butter or margarine
•3/4C. brown sugar
-Cut biscuit dough into small pieces & toss in cinnamon sugar mixture to evenly coat.
- In a Bundt pan coated with nonstick cooking spray, layer biscuit pieces & apples alternately, beginning & ending with biscuit pieces. (Be sure to leave room for your brown sugar & butter mixture to boil while cooking. That way you won't end up with a mess in your oven.)
- In a small pan, melt butter or margarine & combine it with the brown sugar.
- Simmer for 2 minutes before pouring evenly over the biscuits.
- Bake in a 350 degree oven about 30 minutes or until biscuits are a nice golden color.
- Allow it to rest in the Bundt pan for 10 min. before inverting onto a serving plate.
