Tasty Tuesday: BBQ Pork Hash

This deliciousness came about the morning after Damien's birthday party, when I had an abundance of BBQ Pork & baked potatoes leftover. I'll admit, that I was a bit wary of how this would taste. But every flavor held its own without being too overbearing. And, since it was made mostly from leftovers, it gets bonus points for being one of the fastest breakfasts yet! 


Here's how simple it is to take leftover BBQ Pork & baked potatoes into a tasty BBQ Pork Hash (no real recipe required).

 *************
•Slice up the baked potatoes, fry them with a bit of olive oil & season with seasoned salt and black pepper.

•While the potatoes are frying, heat up the BBQ pork with a bit of extra BBQ sauce since the leftovers tend to get a bit dried out. 

•For the eggs, you can make sunny side up, over-easy or over-medium. Just be sure that you cook them in a bit of olive oil to help keep this already heavy dish on the lighter side. 

•To layer it all up, begin with the potatoes, BBQ pork, some shredded cheddar if you'd like) & the eggs. 

•Top it all off with some sour cream & green onion for a light finishing touch if you'd like & serve it with a side of toast.

Snacktastic Saturday: Easy Cinnamon Sugar Cornbread

Excuse me while I sound like a broken record & once again tell you how much I love fall (I really do). Fall is synonymous with comfort food. Which always makes me instantly think of a nice big pot of chili. But don't forget the cornbread. And cinnamon sugar. Wait, what?! 


Let me clarify that this cornbread isn't meant to be eaten with the chili (unless you want to). But it does make for an amazing afternoon snack or even a tasty breakfast. 


•Start with your favorite cornbread (I always double or sometimes even triple whatever recipe I'm making so that I have plenty left over.)
•Warm it up in the microwave for 15-20 seconds.
•Top it with a pat of butter & a generous sprinkling of cinnamon sugar.

Fun Friday: Cinnamon Stick Votive Holder

I love the smell of fall! It's pumpkins, caramel & cinnamon all rolled into one. So even though I'm a huge stickler for holiday decorations (you won't find any scarecrows at my house until November), I always have to make this Cinnamon Stick Votive Holder as soon as the season starts. 


As long as you have a few supplies, you can make this is less than 5 minutes. And that's including the amount of time it takes for your hot glue gun to heat up.


•glass votive holder with smooth sides (mine happens to be from a Glade candle)
•raffia paper (to make it easier to glue the cinnamon sticks on)
•cinnamon sticks
•twine or other kind of ribbon (optional, but it gives the votive holder a nice touch)

-Start by unrolling your raffia paper & cutting it to fit the size of your votive holder. Then glue it down with a line of hot glue. 
-Next, glue the cinnamon sticks in place on top of the raffia paper. 
-If you'd like, you can tie a bit of twine or ribbon around it all & secure it in place with a dot of hot glue.

Work It Wednesday: Age Smoothing Eye Serum from SOBO Skin Care

I have a confession to make. For years, I applied hemorrhoid cream under my eyes. First, let me start by saying that I saw this on Models, Inc., another Aaron Spelling creation back in his 90210 & Melrose Place days. I could never tell if it helped my puffy eyes, but boy could you tell when I didn't put it on! Flash forward to the current decade & my eyes are still puffy daily. The first thing I noticed was that the serum itself felt greasy. Like really greasy. Which had me running to the mirror to check out just how bad it was. I was shocked! There was no greasy residue at all! Instead, I had a soft, almost matte-like finish underneath my eyes. I pretty much fell in love with this stuff right there, before even discovering if the product actually worked or not. 



The main thing I noticed, was how well my concealer stayed put under my eyes. I'm used to applying it numerous times a day (heaven forbid if I watch a sappy movie or it's allergy season), but never gave another application a second thought when I applied the serum. Usually, I only apply something like this once a day, but seeing as how I was pleasantly surprised by the results I was seeing, I decided to actually follow the directions & apply it every morning & night. Of course I did still have some bags under my eyes (I contribute that to being a busy mom of three small kids), but nowhere near what they usually look like.

Tasty Tuesday: Pumpkin Pancakes

It's fall! And you know what that means, right? Pumpkin! Yep, I use this time of year to consume any & everything that is pumpkin. And one of my favorites, is Pumpkin Pancakes. There's just something about the added flavor of pumpkin with pure maple syrup that makes me all giddy inside. Too much? Okay, well, how about I share the giddiness then? 


Now that you're drooling over your computer screen there, I'll even be nice enough to share the recipe. Are you giddy yet?

Pumpkin Pancakes
A delicious breakfast treat to help kick of fall!
Ingredients
  • 1 C. flour
  • 1 1/2 Tbsp. brown sugar
  • 2 tsp. baking powder
  • 2 tsp. pumpkin pie spice
  • 1/4 tsp. salt
  • 1 egg
  • 3/4 C. milk
  • 1/2 C. pumpkin puree
  • 1 Tbsp. melted butter
  • pat of butter & pure maples syrup, if desired
Instructions
•Carefully whisk all ingredients together in a medium sized bowl. •Drop by 1/3 cupfuls onto a hot & greased griddle. •When pancakes begin to bubble, flip & finish cooking until done. •Top with a pat of butter & pure maple syrup, if desired.

Fall is officially almost here! It's not the crunching of the leaves that tells you, but the arrival of Pumpkin Spice Lattes at coffee shops everywhere. Unfortunately for me, making a daily visit to a coffee shop is out of the question. But that's okay since I can enjoy a Pumpkin Spice Latte without even leaving my home, whenever I want. 


I keep it simple when it comes to making a Pumpkin Spice Latte & make it in the mug itself (hence why there's a bit of pumpkin along the edges of the cup).

Pumpkin Spice Latte
Forget seasonal, enjoy a Pumpkin Spice Latte at home whenever you're in the mood for one!
Ingredients
  • 3/4 C. milk
  • 2 Tbsp. pure maple syrup
  • 3 Tbsp. pumpkin puree
  • 1/4 tsp. vanilla extract
  • 1/4 tsp. pumpkin pie spice
  • 1/2 C. freshly brewed strong black coffee
  • optional: whipped cream, nutmeg, cinnamon &/or cinnamon stick
Instructions
•In a large cafe mug, combine first 5 ingredients & heat in the microwave.  •Use an immersion blender to thoroughly blend & create some froth. (If you don't have an immersion blender, you can use a standard blender.) •Slowly pour freshly brewed strong black coffee into the side of the mug. •Top with whipped cream, nutmeg, cinnamon &/or a cinnamon stick if desired.

Fun Friday: Pom Pom Bookmark

Lately I've been on a huge reading kick. But of course, I have three very busy kids & it can take me a couple hours just to read a single chapter sometimes. But what's worse than taking forever to be able to read just a little bit, is when you go to where you left off, only you don't know where that is. Of course a bookmark is the most logical solution since I'm not a page folder. The only problem with that, is the fact that my kids are currently obsessed with bookmarks. They disappear constantly. So I decided to make myself a bookmark that would make it easy to tell when it got swiped. Bonus points for being "fun" so I usually catch the bookmark bandit playing with it moments later. 



Making this Pom Pom Bookmark was super easy! Just take some yarn & wrap it around your fingers a million times (This one is 120 & it is HUGE, but 50-90 would probably be more suitable). Then all you have to do is slide the yarn off your fingers, take a small piece of yarn,tie it securely in the middle & cut all of the looped pieces open. This is now the part where you tie on a tail, or tie it onto a paperclip. Once you start snipping away like Edward Scissorhands to give the pom pom it's round shape, it will be a huge pain to attach it to anything. Unless you make a monstrous one like me. Which is only necessary if you have a bookmark bandit at your house too.

Think It Thursday: Never Forget

• 8:46 a.m. - American Airlines Flight 11 with 81 passengers & 11 crew members on board, crashes into the North Tower of the World Trade Center.

• 9:03 a.m. - United Airlines Flight 175 with 56 passengers & 9 crew members on board, crashes into the South Tower of the World Trade Center.

• 9:37 a.m. - American Airlines Flight 77 with 58 passengers & 6 crew members on board, crashes into the Pentagon. 125 personnel were lost.

• 10:03 a.m. - United Airlines Flight 93 with 37 passengers & 7 crew members on board, crashes in a field in Somerset County, Pennsylvania.  


Just like everyone else, I remember that day vividly. I was on my way to work from a meeting when news of the first plane hitting the North Tower came over the radio. 

I worked at a kiosk, located in the electronics department of Sears. There was a bunch of us, keeping close to the TV's, so we could find out what the reports were saying, while still looking like we were working. When the second plane came into sight, everyone stopped. We watched it crash into the South Tower on about 50 TV's at once. It made the moment more surreal. 

After the South Tower was struck, it's a bit of a haze as to what happened next. I'm not sure if we were sent home before or after the third plane struck the Pentagon. But since I worked for a cellular company at the time & towers everywhere were being jammed, there was no reason for me to be there. 

When I heard about the fourth plane, I was instantly worried. The reports were just all saying near Johnstown, Pennsylvania & I have family there. Luckily, they weren't harmed.

So many people lost their lives that day, both in the sky & on the ground. They are all strangers to me, but I can promise them this.... I will never forget you!

Potty Training with Pull-Ups Big Kid Academy

Watch for cues - So how did I know that Hayden was finally ready to buckle down & hop on the potty train? Well, it was simple, she told me. No, she didn't exactly say that she was ready (at least not like that), but letting me know immediately after she soiled her diaper (or occasionally before), was a sure sign. 


   Go the extra mile -Here's a couple tricks that I have up my sleeve. Since everything must be a huge production for my little one, a standard pack of Pull-Ups just wouldn't do. We went big (go big or go home, right?) & purchased one of the Doc McStuffins Pull-Ups Starter Kit (a.k.a. - the treasure chest!). Not only can she use the chest for whatever her little heart desires, but it also comes with Big Kid flushable wipes, a progress chart, reward stickers, a free Disney digital book & a coupon booklet. 

Be persistent & develop a routine - Of course persistence & a routine are the building blocks of potty training. I have to keep track of when she drinks, so that we can go sit on the potty about 10 minutes later (& for at least 5 minutes). So now I know you wondering how well they actually work. 

After about 1-2 weeks of 2 chews a day (suggested amount is 2-4 chews daily), I noticed the difference first in my hair. I have super long hair, that is forever breaking, especially when I brush it. After one particular brushing, I looked at my brush to see what the damage was like usual, but I was shocked that there wasn't as much hair collected as there usually is. I chalked it up to a fluke, although we all know that that actually makes no sense. But again the next day, it was the same thing with less hair left behind in my brush. After a few days, I decided that these were freaking awesome!!! 

Of course after a while I noticed that my skin was much clearer & old acne scars seems to be evening out a bit. But the one thing that I didn't notice, was the difference in my nails. But let me say that they didn't stand a chance in the first place since we've been working on projects around our house & on my in-laws major fixer upper. (Sand paper is never your BFF!)

Tasty Tuesday: Breakfast Roll-Ups

So the other morning I wanted something different for breakfast. Unfortunately, I really didn't feel like making anything too extravagant & only had some sausage links to work with. That's when it hit me.


These Breakfast Roll-Ups are insanely simple to make, not to mention a huge hit with the family. I mean sure, they still have that "regular ol' breakfast" taste, it's just a whole new way to eat it. 

All you need is your favorite pancake batter recipe, (just add a bit of water to thin it out a bit & keep the pancakes "silver dollar" size), sausage links, scrambled eggs, shredded cheddar cheese & a dish of maple syrup. 

But just as a fair warning, especially if you serve these to children, they can get extremely messy. So just be ready with a wet washrag to clean them up before they touch...anything.

Messy Monday: Simple DIY Degreaser

Grease. It seems to get everywhere in my kitchen. Of course I'm sure that this wonderful humid summer we're having & my ceiling fan in the kitchen being on almost nonstop, had a bit to do with that problem too. But I'm not really a fan of spraying a chemical degreaser while the fan is on. Let alone when the fan is on & it still feels like a million degrees. 


This Simple DIY Degreaser is super easy to make & use. Of course if you have a really tough job, you may need to add a bit of elbow grease to the mix, which is no different if you used a store bought degreaser.

•1 part water
•1 part distilled white vinegar
•1-2 Tbsp. grease fighting dish soap (like Dawn)

Add all of the ingredients in a spray bottle & give it a gentle shake to blend. 

To use, simply spray degreaser onto surface or (directly onto a rag) & wipe off.

Bogie tells himself that he’s not interested in the BPD investigation into Bud’s death, but he continues to be drawn into it while trying to discover who is attempting to kill Bailey. The investigations seem to parallel each other, then intersect and become intertwined. As the story develops, Isabella, a precocious child obsessed with martial arts, slowly becomes the focus.

The underlying theme of this mystery is lies. Everyone seems to be running on lies and half truths. The only pure and true character is The Girl in White Pajamas.

The attorney questioned the cop's every move, shredded his testimony and made him seem inept. Embarrassed, the cop returned to his seat beside me and muttered, "Everybody lies. The judges lie, the lawyers lie, the witnesses lie.."  Chris wanted to tell him not to worry that in about five years he'd be just as good a liar as they were. The seeds for The Girl in White Pajamas were planted in that courtroom.

My Review

This story begins with a plethora of characters in several different settings, yet eventually, you come to know how they're intertwined by both blood & lies. I started reading this carefully, to make sure I had all of the players straight, but before I knew it, there were so many crazy people that I just couldn't keep track of them all.

I have to say that I called at least part of the ending about halfway through the book. But I had no idea what kind of ride it was going to be in order to get there! This story is filled with Boston grit, lost loves, humorous wit, deceit, eccentric families & murder. 

I don't want to give any details away (that would spoil it), but I read this book in a couple days (unheard of in my house) & can't wait to start the next one in the series!
